RICOTTA & SPINACH TRIANGLES

I decided to combine a few recipes of spanakopita and replace feta by ricotta cheese (which is more rich in protein) and created this very simple & healthy snack. Here is what I used to make about 10 triangles:

Boiled half a package of fresh spinach (about 150 grams) for 10 seconds

Ricotta cheese (about 150 grams)

1 egg

Salt & pepper

Phyllo pastry – cut out each sheet in 3 strips & used double strips for each triangle

Mixed spinach, ricotta, egg, salt & pepper together & stuffed each of the double strips & rolled them into triangles – Baked for 15 minutes.
